This topic is tossed around quite a bit with some confusion; with justification, as it is confusing. I few years back, I wrote a post for MOMeo titled:

I find the best way to determine if you have a food sensitivity is with an elimination diet; you choose a food that you think might be a problem, and completely eliminate it from your diet for 21 days. On the 22nd day, indulge in it all day long. In the following 72 hours, observe how you feel: do you have low energy, fatigue, headaches, stomachaches? If so, it’s best not to eat that food.
